For the most part (besides dessert, duh), I eat healthy food.
It’s actually kind of weird, but I’ve discovered that most dessert blogger’s are healthy eaters. Probably because we all read Chocolate Covered Katie just as much as we read Joy the Baker. It’s all about balance.
On an average day, I’ll have some sort of oatmeal variation for breakfast. I thought I hit the jackpot when I found Overnight Oats because it required no preparation in the morning. I love Overnight Oats, but it’s getting cold and I wanted something warm. I still didn’t want to have to prepare anything in the morning, though, so I was super excited when I found out you can cook oatmeal in a slow cooker.
I’m going to be honest… I’ve never used a slow cooker before, until now. Isn’t that embarrassing? I’m not embarrassed, but it should be embarrassing. If you’re lazy like me and the extent of your breakfast preparation is getting out a bowl and scooping something into it, this overnight slow cooker oatmeal is the perfect recipe for you.

1 cup steel cut oats
4 cups water
1 tsp salt
1/8 cup brown sugar
1. Pour all ingredients in slow cooker and stir until thoroughly combined.
2. Turn slow cooker on low and cook overnight (about 8 hours).
3. Serve in the morning! SO EASY. (Don’t forget to turn your slow cooker off).
