Thin Mint Popcorn

After making Thin Mints, the natural next step is to make Thin Mint Popcorn.  I think so, at least.

If you haven’t given in to the pressure of the little girls and bought a box of Thin Mints yet and you want to make this popcorn, it’s okay because you can make them yourself in 10 minutes or less.

Once you’ve done that, make this popcorn, but make sure that you have someone to share with.  Otherwise, I can guarantee you’ll eat it all.  It’s super addictive.  (Not addicting, which I learned from Grammar Girl.)

Anyway, it’s good.  That’s all I can tell you.  It’s a sweet, minty, salty explosion in your mouth.  That sounds appetizing, right?

Thin Mint Popcorn

Ingredients
  • 10 cups popcorn, popped (Not 10 cups of kernels, that would be a disaster)
  • 10 oz vanilla almond bark (or 5 blocks/squares)
  • 1 tablespoon vegetable oil
  • ½ teaspoon peppermint extract (it’s strong stuff!)
  • 20 thin mints, crushed

Instructions
  1. Melt the vanilla almond bark in the microwave. (It should take about 1½ minutes.)
  2. Once melted, remove from the microwave and stir in the vegetable oil and peppermint extract.
  3. Pour the melted almond bark over the popcorn and stir until the popcorn is fully coated.
  4. Once coated, pour the crushed thin mints over the popcorn and stir until combined.
  5. Pour onto a baking sheet covered with parchment paper until cooled.
  6. Serve and enjoy!

No Bake Homemade Thin Mints – National Chocolate Mint Day

So I did a poll on my Facebook Page yesterday to see what everyone’s favorite Girl Scout Cookie is.

I figured the answer would be Thin Mints, but I was really happy to see a variety of different answers!  However, thin mints won in the end, but that worked out perfectly for me because a) Today is National Chocolate Mint Day and b) These are really freakin’ easy to make.  Like so easy that if you don’t make these, I’ll judge you. Just kidding, but really they’re so good and so easy and I think you should make them.

I will admit, I wasn’t sure how good these would taste because what kind of person expects a Ritz cracker to transform into a Thin Mint?  No kind of person.  But I promise you these taste exactly like Thin Mints.

These wonderful Thin Mints are from Avery at Love, Veggies and Yoga and can easily be scaled down.

Homemade No-Bake Thin Mints

Ingredients
  • 40 Ritz crackers
  • 2 cups chocolate chips
  • 2 tablespoons vegetable oil
  • 1 teaspoon peppermint extract

Instructions
  1. Line a pan with parchment or wax paper.
  2. In a double boiler (or a bowl set over a pan of barely simmering water, or in the microwave), melt the chocolate and shortening. When the mixture is smooth, stir in the peppermint extract. Using two forks, dip the cookies one at a time into the chocolate. Move them to the pan to cool.
  3. To make these last longer (and taste better, in my opinion) freeze them!

Copycat Mother’s Circus Animal Cookies

When I was a kid, I used to love Mother’s Circus Animal Cookies.

I used to pride myself in elementary school for being such a good “sharer” since I was an only child.  However, apparently sharing doesn’t count when it comes to Mother’s cookies.

One of my friends had to stay at my house in 4th grade for a week because her mom was having surgery.  My mom packed our lunches in the morning, and when I got to lunch, my friend had Mother’s cookies in her lunchbox and I did not.

I was so mad that I didn’t talk to my friend the rest of the day… as if it was her fault that my mom packed her the cookies.

So, moral of the story=Mother’s cookies are too good to share, so make sure you have enough.  And if you don’t have enough, you can now make them!

Chocolate Chip Cookie Brittle- Last Minute Super Bowl Snack

Sorry for the lack of posts this past week.

It’s been super busy and my computer decided to malfunction, so I’ve been without it this week.

I hope you’re all having an awesome Super Bowl Sunday.


If you haven’t made any dessert, it’s not too late to whip this cookie brittle up before the game.  It’s super, super good.  It’s exactly what the title says; a mixture between a chocolate chip cookie and brittle. It’s crunchy and thin like brittle, but the taste is like chocolate chip cookies.  Seriously the perfect mixture.

Chocolate Chip Cookie Brittle
Adapted from: All Recipes

Ingredients

  • 1/2 cup butter (no substitutes), softened
  • 1/2 cup sugar
  • 1/2 cup white corn syrup
  • 2 cups all-purpose flour
  • 1 1/4 cups chocolate chips
  • 1/2 cup thinly sliced almonds

Directions
  1. In a mixing bowl, cream the butter, sugar, and corn syrup.
  2. Gradually add flour; mix well. Stir in chocolate chips and almonds. 
  3. Line a 15-in. x 10-in. x 1-in. baking pan with foil; coat with nonstick cooking spray. 
  4. Gently press dough into the pan.
  5. Bake at 350 degrees F for 20-25 minutes or until golden brown. 
  6. Cool in pan on a wire rack. Invert pan and remove foil. Break brittle into pieces; store in an airtight container.
