My Favorite Healthy Banana Bread

Honestly, I would have titled this post “My Favorite Banana Bread” and not just “My Favorite Healthy Banana Bread,” but my moms banana bread will forever be my favorite.

I’ve made many, many, many banana breads, so it’s saying something to give this recipe such a label as “my favorite.”  

So, here you have it, my favorite healthy banana bread.  Full of chia seeds (which I do not suggest you leave out because they add a fantastic crunch), honey, whole wheat pastry flour, orange, banana, coconut oil, and other good-for-you ingredients.

My Favorite Healthy Banana Bread

Ingredients
  • ½ cup oat flour (oats, finely ground into flour texture)
  • ¾ cup whole wheat pastry flour
  • ⅓ cup brown sugar
  • ¼ cup honey
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 4 tablespoons coconut oil, melted
  • 1 large egg, lightly beaten
  • 1 ripe banana, mashed
  • 1-2 tablespoons chia seeds (optional)
  • 1 teaspoon vanilla extract
  • Juice of 1 orange

Instructions
  1. Preheat oven to 350 degrees.
  2. Whisk together flour, sugar, baking powder, baking soda, chia seeds and salt in a bowl.
  3. In a mixer, beat together honey, and brown sugar.
  4. Beat in the melted coconut oil and orange juice. Add the egg and beat until well combined.
  5. Add the mashed banana and vanilla.
  6. Stir in the dry ingredients until just combined. Spread the batter into a buttered loaf pan.
  7. Bake for 35-40 minutes, or until a cake tester comes out clean. Cool in the pan for 10 minutes, and then finish cooling on a rack.

I’m sure you’ve all heard of Chocolate Covered Katie, but if you haven’t, you need to look at her blog.

I love making desserts, but when I go on trips and stuff, I like to bring healthy snacks so I always go to her website when I’m looking for one.

The last recipe I made turned out really well.  I made her Cake Batter Energy bars and they were delish.  The only change I made to the recipe was adding a “frosting” made with cake batter flavored protein powder mixed with melted coconut oil.

Healthy Deep Dish Chocolate Chip Cookie Pie

No, I didn’t wake up thinking “I’m gonna make a bean cake,” because that’s disgusting.

I did, however, wake up thinking “Uh oh, it’s my friends birthday and she only eats healthy foods.  What should I do?”

That’s when you head over to Katie’s website.  It’s the perfect solution for the situation I found myself in.

I browsed through her recipes and they all look so good, but I settled for the deep dish cookie pie, because who doesn’t love cookie pies?

Let me tell you, this is the best option for a “birthday cake” for someone who is a health freak.  I was really worried about making a pie with beans in it, so I made it and didn’t tell my friend what was in it until after she ate it.  Even after she found out that it was made almost completely of beans, she still devoured the entire pie in a day (with help from others).  Success?  I think so.
