Crunchy Pumpkin Pie Granola

Is it too late for pumpkin?  Well, I’m sorry, but the Farmer’s Almanac says that fall doesn’t end until about December 21st, so I’m just going to assume that it’s still acceptable for me to bake with pumpkin.

To be honest, I’m actually sick of pumpkin.  So why am I still baking with it?  Well, I’m going to be honest again.. I made this about 3 weeks ago and forgot to put it on the blog, so yeah, whoops.

Even though I’m sick of pumpkin, I would make this again. Right now.  And eat it all.  The cinnamon/pumpkin combination make this the best granola I’ve ever made.

Also if you’re tight on money and trying to think of gifts to give people for Christmas, this would make a great gift.

Pumpkin Pie Granola

Ingredients
  • 5 cups rolled oats
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • ½ teaspoon salt
  • ¾ cup brown sugar
  • ½ cup pumpkin puree
  • ¼ cup apple sauce
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • ½ cup raisins

Instructions
  1. Preheat oven to 325 degrees and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, cinnamon, nutmeg, salt, brown sugar, pumpkin puree, apple sauce, honey, and vanilla. Spread evenly onto prepared baking sheet and stick in the oven.
  3. Cook for 40 minutes (stir the oats around halfway through cooking time). Remove from oven and let cool slightly. Fold in raisins.
  4. Let cool completely and eat!
  5. Store in an airtight container.

Microwave White Sugar Caramel Corn with Butterscotch Chips and Peanuts

Sticking with the “lazy baker” theme this week, here is another great, quick, crowd-pleasing recipe.

I have an excuse for my laziness. I graduate college in 3 weeks and I’m freaking out and extremely busy, but so excited!

However, I just can’t bring myself to have company over and not have some sort of treat to give them, so I’m just taking some shortcuts.  I seriously made this caramel corn in 30 minutes.  I was super excited!

My friend and  I almost ate the whole batch together in one night.  It’s really good.

Microwave White Sugar Caramel Corn with Butterscotch Chips and Peanuts

Ingredients
  • 4 quarts popped popcorn
  • 1 cup granulated sugar
  • ½ cup margarine
  • ¼ cup dark corn syrup
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup peanuts
  • ½ cup butterscotch chips
  • ½ tsp baking soda

Instructions
  1. Place the popped popcorn into a large microwave-safe bowl (And one that will fit in the microwave!). Set aside.
  2. In a 2 quart casserole dish, or other heat-proof glass dish, combine the sugar, margarine, corn syrup, salt and vanilla. Heat for 3 minutes in the microwave, then take out and stir until well blended.
  3. Return to the microwave, and cook for 1½ minutes. Remove from microwave, and stir in the baking soda.
  4. Pour syrup over the popcorn in the bowl. Gently stir the popcorn mixture with a wooden spoon until the popcorn is fully coated.
  5. Place bowl into the microwave, and cook for 1 minute and 10 seconds.
  6. Remove, stir, and return it to the microwave.
  7. Cook for another 1 minute and 10 seconds.
  8. Dump the popcorn out onto waxed paper, and let cool until coating is set.
  9. Once cool, stir in the butterscotch chips and peanuts.
  10. Store in an airtight container.

German Chocolate Puppy Chow

German Chocolate Puppy Chow

It’s cold outside and I just want to stay under the covers all day, watch movies, and eat German Chocolate Puppy Chow.

If you like puppy chow and you like coconut and you like German chocolate cake, you should do the same.  Even if it’s warm where you are.  It’s just the right thing to do.

Ingredients
  • ½ Cup Pecan Butter- Recipe: http://cookieandkate.com/2012/pecan-butter-recipe/
  • 1 cup chopped Baker’s German Chocolate
  • 1 cup shredded sweetened coconut
  • 9 cups crispy rice cereal
  • 1 ½ cups powdered sugar

Instructions
  1. In a saucepan over low heat, melt the chocolate; add pecan butter and mix until smooth.
  2. Remove from heat, add cereal and coconut and stir until coated.
  3. Pour powdered sugar into large plastic bag, add coated cereal and shake until well coated. Store in airtight container.

Kernel’s Seasons Review: 3 New Savory Flavors

Did you know Kernel’s Seasons has 3 new savory flavors?  Pizza, Bacon Cheddar, and Buffalo Wing.

Let me give you the run-down:

1) Pizza

If you like pizza, you’ll like this flavor.  It kind of reminded me of  Pizza Pringles, only better because you can control the amount you use.  I made crackers with this flavor and it added a subtle taste of pizza.  The crackers were so good (I’ll have the recipe up soon), and I give credit to the flavoring.  Taste (on a scale of 1-10): 8.

2) Bacon Cheddar

I’m kind of obsessed with this one.  Every time I make eggs now, I put this flavoring on them.  It tastes like bacon and cheddar and for all you calorie counters, you can get the taste for 90% less calories.  If you don’t care about calories, it’s still good. Taste: 9.

3) Buffalo Wing

Wellllll… I liked this one when I tried it plain.  But, for some reason, when I put it on popcorn and ate the popcorn it gave me (and everyone else who tried it) a burning sensation in my nose.  Not pleasant.  I’m sure it would be good on chicken, but I wouldn’t suggest putting it on popcorn.  Taste: 6.

These are pretty much fool-proof.  I make them every year for Christmas gifts (because I’m a poor college student) and they’re always a hit.

Perfect gift, easy to make, and delicious.

Sweet and Salty Nuts

Adapted slightly from: All Recipes 

Ingredients

  • 1 egg white
  • 1 tablespoon water
  • 1 pound pecan halves (or your nut of choice)
  • 1 cup white sugar
  • 3/4 teaspoon salt
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet.
  2. In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon.
  3. Add nuts to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet.
  4. Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.
